Veggie Chilli

Ingredients

  • 2 onions, finely diced
  • 4 cloves garlic, crushed
  • 2 red chillies, diced
  • 1 courgette, diced
  • 1 carrot, diced
  • 2 peppers, diced
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp hot paprika
  • 2 bay leaves
  • 1 can chickpeas
  • 1 can kidney beans
  • 2 tins chopped  tomatoes
  • 1 tsp salt
  • 1 tbsp. agave syrup/ honey
  • 1 tbsp. tomato puree

Method

  1. Fry the onion, garlic and chilli in a little coconut oil until soft, add the peppers, carrot and courgette and fry for 5 minutes.
  2. Add the spices, beans, chickpeas, tomatoes, puree, agave syrup and salt and simmer gently for 15 minutes, taste and add more seasoning.
