Curried Chicken Skewers (Serves 4)


  • 4 chicken fillets, cut into chunks
  • 12 thin slices of chorizo
  • 1 red pepper, cut into chunks
  • 1 green pepper, cut into chunks
  • 4 button mushrooms
  • For the Marinade
  • Juice of one lemon
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon green curry paste, I like Mae Ploy
  • 4 skewers


  1. Combine the ingredients for the marinade in a bowl, and add the chicken, cover and marinade for 1 hour.
  2. If the skewers are wooden soak them in cold water for 30 minutes to prevent them burning on the barbecue.
  3. To assemble the skewers thread a piece of chicken, then a piece of chorizo, a piece of red pepper, a piece of chicken, a piece of chorizo, a piece of green pepper and so on. Brush with a little oil to prevent sticking.
  4. Barbecue the skewers on a medium heat for 10-12 minutes, turning occasionally, until chicken is fully cooked
