- 100g Rice noodles
- 2 cloves garlic, crushed
- 1 chilli, sliced
- 1 tsp grated fresh ginger
- 2 chicken fillets, sliced
- Handful raw prawns
- 3 tbsp soy sauce
- 1/3 tin coconut milk – you can use more but i’m watching calories!
- 200mls chicken stock
- Juice ½ lime
- Cover the noodles with boiling water and leave for 10 minutes.
- Heat a little coconut oil in a pan, add the garlic, chilli and ginger, fry for a minute.
- Add the chicken and cook for 5 minutes, add the prawns and soy and cook for 2 minutes.
- Add the coconut, chicken stock and lime juice and simmer for 3 minutes .
- Add the peppers and pak choi and simmer for 2 more minutes, taste for seasoning.
- Strain the nooldles and divide between 2 bowls, and top with the chicken and prawn mixture.
