Chicken and Prawn Noodles with Coconut and Lime Sauce
  • 100g Rice noodles
  • 2 cloves garlic, crushed
  • 1 chilli, sliced
  • 1 tsp grated fresh ginger
  • 2 chicken fillets, sliced
  • Handful raw prawns
  • 3 tbsp soy sauce
  • 1/3 tin coconut milk – you can use more but i’m watching calories!
  • 200mls chicken stock
  • Juice ½ lime
  1. Cover the noodles with boiling water and leave for 10 minutes.
  2. Heat a little coconut oil in a pan, add the garlic, chilli and ginger, fry for a minute.
  3. Add the chicken and cook for 5 minutes, add the prawns and soy and cook for 2 minutes.
  4. Add the coconut, chicken stock and lime juice and simmer for 3 minutes .
  5. Add the peppers and pak choi and simmer for 2 more minutes, taste for seasoning.
  6. Strain the nooldles and divide between 2 bowls, and top with the chicken and prawn mixture.
