Niamh Swail, owner and resident chef has enjoyed a long standing passion for food and teaching. Trained at Cordon Bleu level and as a graduate of Darina Allen’s internationally acclaimed Ballymaloe Cookery School, Niamh has honed and perfected her culinary expertise. Since first opening its doors for business in 2007, Niamh has grown the Ivy’s loyal following.
With a business management degree and being a qualified as a speech and drama teacher, Niamh’s personable teaching style and natural presentation skills lend themselves perfectly to the learning culinary experience. Her informative and accessible demonstrations and gourmet cooking classes take place in The Ivy’s purpose built teaching kitchen.
When she’s not hosting gourmet demonstration evenings or catering outside events, Niamh is
kept busy as mum to her three adorable young children; Jamie, Lucy and baby Tom. Niamh is always on the go, gathering eggs laid by their free range hens, minding their family dogs, tending to the orchard and finding delicious new recipes!
A prize winning horsewoman herself, Niamh is at home with the horses grazing nearby paddocks as free range chickens happily amble about The Ivy’s extensive gardens. She and her husband Marcus Swail, vet to the Irish Olympic Equestrian team share a passion for country life and quality food. This love of the country life and gourmet cuisine prepared with best available ingredients is one Niamh invites you to experience at The Ivy.
